Pork & Sauerkraut with Squawtke Potatoes

The best meal to bring good luck in the new year!

 

  • Pork Roast
  • Oil
  • Sauerkraut
  • Onion
  • Celery
  • Salt & Pepper
  • Sugar
  • Potatoes
  • Milk
  • Butter

Instructions:

Cut a small piece of the pork off (with fat) for the potatoes. Brown the roast on all sides in a pot with oil and onions. Fill pot with water. Add rinsed sauerkraut, chopped celery, salt & pepper to taste, and a touch of sugar. Cook pot in oven at 350 degree for 2 - 3 hours.

 

Finely chop extra pork piece and fry super slow for 1 hour. Add finely chopped onion near the end. Peel and cube potates and boil until fork tender. Drain potates but leave a bit of water in the pot and add pork and onions. Add a LITTLE butter and mild. Hand mush.
