Smelly's Enchiladas
My friend Kelly (nicknamed Smelly) is now forever immortalized!

 

Filling:

  • 6 Boiled chicken breast
  • 1 lb. Grated Monterey Jack cheese
  • 1/2 lb. Grated cheddar
  • 1 medium Chopped red onion
  • 1 cup Chicken broth
  • 1/2 cup Sour cream
  • 1/4 tsp. Ground cumin
  • 1 tsp. Season salt
  • 1/4 tsp. Chili powder
  • Corn tortillas

Sauce:

  • 2/3 cup Butter
  • 2/3 cup Flour
  • 3 lbs. Sour cream
  • 4 cups Chicken broth
  • 1/2 tsp. salt

Topping:

  • 1/2 cup Black olives
  • Jalapeño Cheese, grated

Instructions: 

Combine chopped chicken, Monterey Jack cheese, cheddar cheese (save some of both cheeses for the top), onion, broth, sour cream, cumin, season salt and chili powder. Mix well and stuff into tortillas.

 

Sauce: Melt butter and mix with flour. Add chicken broth salt and sour cream.

 

Fill pan with stuffed tortillas, cover with sauce and sprinkle with both saved cheeses and the jalapeño cheese. sprinkle with chopped olives. Bake at 350 degrees for 30 to 40 minutes.
