Mom's Spaghetti and Meatballs
A smell-good, cook-all-day meal that will bring the neighbors begging for a plate!

Sauce:

  • Oil
  • 1 Chopped onion
  • Garlic
  • 2 large cans of Whole tomatoes chopped
  • 2 small cans Tomatoes paste
  • 1 large can Tomatoes sauce (16 oz.)
  • 2 tsp. Salt
  • 1 tsp. Garlic salt
  • 1 tsp. Pepper
  • 1 tsp. Oregano
  • 1 tsp. Basil
  • 2 tsp. Brown sugar
  • 1/4 cup Parsley
  • 1/2 tsp. Accent spice
  • 1/4 tsp. Thyme
  • 1 Bay leaf

Instructions:

In a large pot, sauté onions and garlic in oil. add tomatoes items. Fill pot with water almost to the top. Add all spices and simmer at least 5 hours.

 

Meatballs:

  • 1 1/2 lbs. Meatloaf mix
  • 1 1/2 lbs. Hamburger
  • 3 Dry slices of bread
  • 1/2 to 1 cup Cracker crumbs
  • 3 eggs
  • 1 tsp. Garlic Salt
  • 1/2 tsp. Salt
  • 1 tsp. Oregano
  • 1 tsp. Basil
  • 3/4 cup Parmesan Cheese (plus 1/2 parmesan cheese for sauce)
  • 1 Tbls. Milk
  • 1/2 tsp. Parsley
  • 1/2 tsp. Pepper

Instructions:

Mix all ingredients and roll into meatballs. Add 1/2 cup additional parmesan cheese to sauce and then drop in meatballs. Cook for 1 1/2 hours in sauce, scooping fat of top while cooking. (Note: I also add 1 lb. of hot sausage to the sauce when I add the meatballs.)
