Mom's Spaghetti and Meatballs
A smell-good, cook-all-day meal that will bring the neighbors begging for a plate!
Sauce:
- Oil
- 1 Chopped onion
- Garlic
- 2 large cans of Whole tomatoes chopped
- 2 small cans Tomatoes paste
- 1 large can Tomatoes sauce (16 oz.)
- 2 tsp. Salt
- 1 tsp. Garlic salt
- 1 tsp. Pepper
- 1 tsp. Oregano
- 1 tsp. Basil
- 2 tsp. Brown sugar
- 1/4 cup Parsley
- 1/2 tsp. Accent spice
- 1/4 tsp. Thyme
- 1 Bay leaf
Instructions:
In a large pot, sauté onions and garlic in oil. add tomatoes items. Fill pot with water almost to the top. Add all spices and simmer at least 5 hours.
Meatballs:
- 1 1/2 lbs. Meatloaf mix
- 1 1/2 lbs. Hamburger
- 3 Dry slices of bread
- 1/2 to 1 cup Cracker crumbs
- 3 eggs
- 1 tsp. Garlic Salt
- 1/2 tsp. Salt
- 1 tsp. Oregano
- 1 tsp. Basil
- 3/4 cup Parmesan Cheese (plus 1/2 parmesan cheese for sauce)
- 1 Tbls. Milk
- 1/2 tsp. Parsley
- 1/2 tsp. Pepper
Instructions:
Mix all ingredients and roll into meatballs. Add 1/2 cup additional parmesan cheese to sauce and then drop in meatballs. Cook for 1 1/2 hours in sauce, scooping fat of top while cooking. (Note: I also add 1 lb. of hot sausage to the sauce when I add the meatballs.)
