Crazy Chocolate Cake
This is my grandmother's war-time cake (no eggs) and is my family's favorite by far!

 

Cake:

  • 3 cups flour
  • 2 cups sugar
  • 1 tsp. Salt
  • 2 tsp. Baking soda
  • 8 Tbls. Cocoa
  • 3/4 cup oil
  • 2 Tbls. Vinegar
  • 2 tsp. Vanilla
  • 2 cups water

White Icing (everyone loves the icing so much we usually double it!):

  • 1/2 cup Butter
  • 1/2 cup Shortening (Crisco)
  • 1 cup Sugar
  • 3/4 cup Milk
  • 1 tsp. Vanilla

Instructions:

For the cake, combine the dry ingredients in a 13" x 9" pan. Mix the oil, vinegar and vanilla and pour over dry mixture. Pour 2 cups water over all ingredients and mix well with a fork. Bake at 350 degrees for 40 minutes. (Bake at 325 if using a glass pan.)

 

For the icing, blend butter and shortening. Add sugar a little at a time. Heat milk, but not scolding and add a little at a time. Add vanilla. Turn mixer on high and beat until peaks form.
